Here's everything you'll need:
1/2 cup black chia seeds
1 tsp salt
1/4 cup honey or maple syrup
2 cups coconut milk (canned, culinary)
1 tsp vanilla extract
Here's how to do it:
In a large mixing bowl, combine chia seeds and salt.
In a separate mixing bowl, combine coconut milk, honey, and vanilla extract and mix with a whisk until well-combined.
Add liquid ingredients to the dry mixture and combine with a whisk until fully incorporated.
Transfer to an airtight container.
Cover and refrigerate for at least 2 hours (or overnight if possible) before use to allow the chia to "bloom." Stirring may be required after 1 hour.
