Chia Seed Pudding

This is a simple, yummy, guilt-free treat. It's perfect for a date night in or sharing at a get-together!


Prep time: 5 min

"Cook" time: 2+ hrs

Serves: 2


Here's everything you'll need:

  • 1/2 cup black chia seeds

  • 1 tsp salt

  • 1/4 cup honey or maple syrup

  • 2 cups coconut milk (canned, culinary)

  • 1 tsp vanilla extract


Here's how to do it:

  1. In a large mixing bowl, combine chia seeds and salt.

  2. In a separate mixing bowl, combine coconut milk, honey, and vanilla extract and mix with a whisk until well-combined.

  3. Add liquid ingredients to the dry mixture and combine with a whisk until fully incorporated.

  4. Transfer to an airtight container.

  5. Cover and refrigerate for at least 2 hours (or overnight if possible) before use to allow the chia to "bloom." Stirring may be required after 1 hour.
