Here's everything you'll need:
1 bag Brussels sprouts
2 large sweet potatoes
1 large onion, chopped
1 cup sunflower seeds
1 cup medjool dates
avocado oil
salt (to taste)
Here's how to do it:
Peel and chop the sweet potatoes and Brussels sprouts into small, bite-sized chunks.
Toss the sweet potatoes, Brussels sprouts, and chopped onions in the avocado oil and put the mixture on a baking sheet pan.
Bake at 350 degrees until almost soft (about 15 minutes).
Sprinkle finely diced medjool dates across the mixture and put the sheet pan back in the oven until ingredients are completely soft (about 10 minutes).
Remove from the oven and sprinkle sunflower seeds and salt to taste. Enjoy!
